Lemon Shortbread Cookies

Serves: 24 

Dry Ingredients

  • All Purpose Flour – 1 cup
  • Granulated sugar – 1/3 cup
  • Baking powder      – ¼ tsp
  • Salt                               – ½ tsp

Wet Ingredients

  • cold butter       – ½ cup
  • whole milk        – 2 tblsp
  • vanilla extract – 1 tsp
  • lemon juice       – 2 tblsp
  • lemon zest        – 2 tblsp

Procedure

  • In a mixing bowl add granulated sugar, lemon juice and lemon zest; mix together and keep aside.
  • In a food processor, add all the dry ingredients along with cold butter; pulse it once and achieve the crumbled texture (for folks who do not have a food processor, using a mixie/blender or even using hand mixing can yield similar best result)
  • Now add the sugar and lemon mixture along with 3 tblsp of room temperature whole milk and vanilla essence. Pulse mix in the food processor until all the ingredients are combined together.
  • Place this mixed dough over the working counter top and knead for about 2 mins
  • Shape the dough into 6-8 inch long cylinder blocks and wrap the dough in plastic wrap; refrigerate for at least half an hour.
  • Pre heat your oven at 350 degree F.
  • Remove the plastic wrap from the dough and cut it for about ¼ inch thick slices and place them over the parchment lined sheet pan
  • Bake it for about 10 mins. Cool completely and store it in air tight container.
  • Enjoy the lemon flavored shortbread cookies with your family and friends.
