Ingredients:
- Raisins – ½ cup
- Dried Blueberry – ½ cup
- Dried cranberries – ½ cup
- Black currents – ½ cup
- Tutty fruity – 1 cup
- Orange juice – ¾ cup
- Orange zest – 2 tblsp
- Baking powder – 1 tsp
- Salt – ½ tsp
- Dark brown sugar – 1 cup
- Unsalted butter – 1 cup (room temperature)
- All-purpose flour – 1 ½ cup
- Dry ginger powder – 1 tsp
- Cardamom powder – ½ tsp
- Cinnamon powder – 1 tsp
- Grated nutmeg – ½ tsp
- Almonds – ½ cup
- Pistachio – ½ cup
- Walnuts – ½ cup
- Glazed red cherries – ½ cup
To Glaze:
- Any fruit jam – 1 tblsp
- Warm water – 1 tblsp
Procedure:
- Preheat the oven to 320˚F
- Toast the dry nuts in the oven for about 10 mins and chop into bite size pieces and keep aside
- Grease the 8 inch round pan and lined with parchment paper and keep aside
- In a sauce pan, add the dark brown sugar, room temperature unsalted butter raisins, dried blueberries, dried cranberries, black currents, tutty fruity along with orange juice, bring it to boil and cook it for about 10 mins under medium-low flame or until the dried fruits gets plumpy (ref pic); cool completely
- In a wide mixing bowl add the 3 room temperature eggs and blend it well using hand beater/ fork(ref pic)
- Add the sieved flour, baking powder, salt along with dry ginger powder cinnamon powder, cardamom powder and grated nutmeg; mix well (ref pic)
- Now add the cooked dry fruits ,orange zest, diced glazed cherries and chopped dry nuts and mix well (ref pic)
- Pour the batter into the prepared pan and bake it for about 2 to 2.5 hours or insert a toothpick into the center of the cake, it comes out clean.
- Apply any jam along with a tblsp of warm water and apply over the baked cake and allow the cake to cool completely

NOTE/TIP:
- You can add any available dry fruits and dry nuts
- Also you can add the mixed spice depends on your flavor
- Applying jam towards the end, helps to keep the cake moist
